CCWW Grenache 2017 - AUSVERKAUFT -

Artikelnummer: X256517

Beschreibung

Grenache.

Winemaker's Comment:

Grenache always a favorite and we were lucky to get the same base materials fort he 2017 that we had in 2016. A tiny increase in the amount of Syrah, of only 1%, help add just a tiny bit more weight. A worthy successor we have with the 2017.
Barrique?
Vintage notes:

A very good vintage across California, winter rains broke the 5 year drought and the vines responded positively, giving good yields and high quality. A long, moderate growing season kept concentration high and provided excellent balance. A (small) step up from the good quality oft he 2015 and 2016 vintages, potentially overshadowed by the excellent 2018s, time will tell.

Your favourite recipe for this wine:

"Kamo Shioyaki"

A very simple preparation of duck breast is the Japanese dish called Kamo Shioyaki – Kamo for wild duck, shio is salt and yaki is grilled. Wash and pat dry duck breasts, leaving the skin on. Pierce the skin with a skewer or fork to release the fat. Place in a skillet or frying pan on med-low heat, skin down, until the skin has mostly de-fated, but the meat is still rare. Place on a grill over a pan and broil skin side up under a broiler until the skin is brown and crispy. Flip the duck over, and sprinkle with coarse salt, then grill the meat side to desired doneness. Serve with a nice sauce of your favorite berries and grilled vegetables and potatoes.

OR
"Mahogany Short Ribs"

1.5 kg beef short ribs, cut into 4 pieces (cut between ribs)

1 cup teriyaki sauce

1 cup prune juice

Cover the meat in the teriyaki and prune juice, cover refigerate to marinate overnight.
Remove the ribs from the marinade, bring the marinade to a boil in a large part with 1 cup of water and 4 – 5 whole black peppercorns.
Lower the heat, add the meat and cover. Simmer for 2 hours or until the meat is very tender.
Remove the ribs, reduce the sauce for 5 minutes or until syrupy over medium high heat.
Pour over the short ribs. You can also place under a boiler for a few seconds to crisp and carmelize further.
