Beschreibung


Handpicked, single block Chardonnay made from 100% wild fermented grapes.

Strohgelbgold im Glas, mit glänzenden Lichtern. In der Nase jugendlich und schon komplex mit Schicht um Schicht von Aromen: reife Steinfrüchte, Manuka-Honig, geröstete Mandeln. Hier schon das erste "Hmmmmh!". Am Gaumen dann in glasklarer Ausprägung reife Pfirsichnoten, Melone (die grünfleischige, gerade eben reif und noch nicht zu süß), dazu Mango. Unterlegt von einer kaum wahrnehmbaren mineralisch rauchigen Note - und alles mit eben so viel Säure, daß alles am Schwingen bleibt. Die Fermentation ohne jede Art von Kulturhefen, also völlig natürlich, in einem Mix aus neuen und einem Jahr alten französischen Sylvain und Francois Frere Barriques gibt Struktur und würzig-trockene Länge. Die volle malolaktische Fermentation bringt eine Weichheit in die Fülle. 10 Monate durfte der Wein danach noch auf seinen eigenen Hefen im Fass ruhen und an Komplexität zulegen, bevor der "Raptor" seine Flügel spreizte und seinen Flug begann. Genießen Sie ihn aus angemessenen Gläsern gut gekühlt, aber nicht schockgefrostet ;)


Der Wein aus dem "Raptor" single block ist ein ganz naturnah gemachter Wein: whole bunch pressed (nicht entrappt, wurden die Trauben im Ganzen gepresst), with lees contact (auf den Hefen) und wild fermented in barrel (mit natürlich im Weinberg und auf den Schalen vorkommenden eigenen Hefen faßvergoren). Perfekt zum Salat "Sweet Heat"! Ganz hervorragend passt er auch zur Lachs-Mascarpone-Pizza oder zum Mosambique Chicken

Winemakers comments:

It’s a beautiful day out, let’s have a picnic. You bring some peaches,and I’ll pack a few little baked spice biscuits, as a treat. I know a spot. It’s an orchard, surrounded by a dry stone wall and a large oak tree.
When we get there, we climb up onto the dry stone wall and sit down. We each take a peach, and as we are about to take a bite, we can smell both the peach and the dry stone flint on our hands. Are you getting it? To taste, you have to imagine taking in everything that surrounds us. The juicy ripe peach we’ve just bitten into, the spicy little biscuits, the majestic oak that gives us shade and the bright lemon blossom that covers the trees in the orchard. It’s a moment worth savouring. Shall we open the Chardonnay?

Winemaking:

A limited release expression consisting of small parcels of fruit from a Pete and Anne Reed's vineyard, Central Wairau Valley in Marlborough.
These wines are made to tell a story of where they are grown. This wine is an elegant expression of Chardonnay which was whole bunch pressed and wild fermented for 10 months before bottling.

Appearance: Pale gold
Bouquet: Flinty notes combined with toasted hazelnuts and citrus.
Palate: Concentrated, round and full with flavours of ripe peach, nectarine rounded by integrated oak and citrus blossom.
Vintage notes:
Vintage 2017 delivered a smaller than predicted crop developing fruit forward wines despite nature adding some challenges along the way, with a major November earthquake, a cool and windy summer, and stints of rain in autumn.
Your favourite recipe for this wine: Deliciously paired with roasted free-range chicken, or creamy pasta dishes.

Mozambique Chicken

Ingredients
Serves: 4
20ml olive oil
juice of a lemon
2 level teaspoons paprika
1 and a half level teaspoons dried origanum (or organo)
3 teaspoons Nando's peri-peri sauce or 1 teaspoon chili powder (or to taste)
2 cloves garlic, finely chopped
1 teaspoon salt (or to taste)
30ml tomato paste
120ml fruit chutney
6 skinless, boneless chicken thighs (be nice and buy free range)

Directions
Preparation:15min › Cook:5hours › Ready in:5hours15min
Use some of the olive oil to grease the slow cooker (or casserole).
Place the rest of the oil and all other ingredients except the chicken thighs in the slow cooker and stir to mix.
Remove any excess fat from the chicken thighs, cut in half and place in the slow cooker. Stir to coat well with the marinade.
Cook on LOW for 5 hours.
Serve hot on Basmati rice.
